BACKYARD BURGER

INGREDIENTS
  • Finch Beef Rub

  • Finch Sweet Habanero Sauce

  • Buns

  • Yellow Sweet Onion

  • Extra Virgin Olive Oil or Grape Seed Oil

  • Beef patties

  • Cheese (whatever you like!)

  • Sauerkraut

  • Mayonnaise

  • Tools: cast iron skillet, tongs, bowl, spatula, spoon

Instructions
  1. Caramelize onions in iron skillet with a little oil, and season with Finch Beef Rub. Cook to golden brow.

  2. Prep your burger patties — cover in Finch Beef Rub, flip, and cover again! Do not need to pat into the meat. Let sure for 5 minutes to let rub seep into meat.

  3. Drop patties onto grill for 5 mins and then flip for another 5. From here flip every few minutes until you get to your meat cooked preference. Chris like 155 degrees and well done!

  4. Don’t forget to pull your caramelized onions and drop into a bowl.

  5. In same cast iron, throw sauerkraut in to start cooking. Hit with some beef rub. Just a little!

  6. After a few minutes, pour Finch Sweet Habanero (however much you want!) into the skillet, with the sauerkraut. Mix together using spoon. Let liquid cook off.

  7. Drop cheese on top of your patties while you finish up.

  8. Toast those buns! Chris likes to throw a little mayo on before he puts on the grill. Butter works too, of course.

  9. Add a little mayo to the skillet, into the sauerkraut and sweet habanero mix, to create a sauce for the burger.

  10. Pull patties and buns!

  11. Finish the sauce in the skillet

  12. Caramelized onion onto your burger!

  13. Spread your sauce on the top bun.

  14. Enjoy!

PRO TIP! 

Chris uses his Beef Rub on everything, and loves it on Turkey. Experiment!

Finch Crostini Fajita Steak Bites

INGREDIENTS
  • Finch Beef Rub

  • Finch Sweet Sauce

  • Inside skirt steak

  • Extra Virgin Olive Oil or Grape Seed Oil

  • French baguette bread

  • Cheese

  • Tools: oil brush, bread knife

Instructions
  1. Rub oil on the inside skirt steak pieces

  2. Cover with Finch BBQ Beef Rub

  3. Add steak pieces to the grill on the high heat side to get a nice sear. We’re going to cook to a nice 135 degrees.

  4. Cut baguette into small, pencil thick pieces.

  5. Pat bread down with oil, then apply some beef rub on the pieces.

  6. Drop the bread onto the grill with the oiled and seasoning side on the grill side. Pull after a few minutes based on your toasted bread preference.

  7. Keep an eye on the steak and flip while cooking to that 135 degree sweet spot.

  8. Pull steak and let rest for 5 mins

  9. Cut steak, fajita style

  10. Cheese onto bread, steak slice onto cheese. Dip into Finch Sweet Habanero Sauce

  11. Enjoy!
