Smoked Chicken Croquettes

Ingredient

  • 1 chicken breast

  • 2 chicken thighs

  • 6oz Prosciutto

  • 1/4 flour

  • 1/3 cup milk

  • 1 tsp freshly grated nutmeg

  • Green onions

  • Zavalas Bird Rub

  • Salt to taste

  • 3 eggs

  • Flour to dredge

  • Panko bread crumbs

  • Peanut oil

Instructions

  1. Smoke chicken with Zavalas Bird Rub at 325 until until breast reaches 165.  Let cool completely and the pull and shred

  2. Cut the prosciutto into small pieces and sautéed with oil with the chicken and green onions.   Add the flour , milk, and nutmeg until mixture thickens.  Place in a bowl and refrigerate 1 hour to tighten the mixture up

  3. From mixture in to palm size oval shapes.  Roll in flour and then egg wash and cover in panko.  This will make about 14-16 croquettes

  4. Heat peanut oil to 350 degrees and fry 4-5 croquets at a time.  Each batch will take about 1 min to get to golden and crunchy.
