Pork Short Ribs
INGREDIENTS

Smokey Joe’s All Purpose Rub
-
Pork Spare Ribs (amount is up to you!)

Smokey Joe's Got Ribs? Sauce

Pickle Juice OR Apple Cider Vinegar (In Spray bottle)
Smokey Joe's Pork Short Ribs

Grab the ribs and trim any excess of loose ends.

Turn the ribs upside down where the bones are facing in the air. You should see the excess layer of fat covering the membrane: remove that excess fat to the point where only the membrane remains showing.

proceed to score the membrane.

Cover in Smokey Joe’s All Purpose Rub (Cover, don't Cake!) and let Ribs sit For 10-15 minutes, room temp, so seasoning soaks in!

get your pit temperature to 275-300 degrees max.

Let the ribs cook for 2-3 hours to build bark. Once the ribs start forming a bark start spritzing them with pickle juice or apple cider vinegar.

Once the 4 points are tender, pull the rib off and let rest for 15-30 minutes.

Once the ribs have rested, they are ready to serve.

Chicken Wings
INGREDIENTS

Smokey Joe’s All Purpose Rub

Chicken Wings (amount is up to you!)

Select your wings and make sure you like what you see!

You are welcome to put a binder on them as well, to help seasoning stick (optional).

Pat dry and season with Smokey Joe's All Purpose Rub (cover, don't cake!) and let wings Sit 5-10 mins to let seasoning soak in.

Get your pit temperature to 250-275 max
-
cook wings 30-45 minutes
-
Drop temperature down and slow cook until wings are at 165 internal temperature.

Flash sear 30-45 seconds on each side, or until you see bubbling.

REST for 10 minutes before serving.
