Chicken Salad Pinwheels

Ingredients
- 2 chicken breasts
- 1 cup sliced seedless grapes
- 1/2 cup chopped pecans
- 1/4 cup finely diced celery
- 1/2 cup finely diced apple (we use pink lady)
- 1/4 cup diced green onion
- 1/2 cup Dukes Mayo
- 1/4 cup Plain Greek Yogurt
- An all-purpose BBQ rub and a tangy BBQ sauce of your choice
Instructions
- Season chicken with an all-purpose rub and place on the smoker at 275 for 1 1/2 - 2 hours until the chicken is 163 degrees.
- Remove chicken and let rest. Meanwhile, slice the grapes, green onion, celery, and apple. Mix together with pecans, mayo, yogurt, and a splash of tangy BBQ sauce. Dice (or shred) the chicken — we dice ours for better texture — and mix into the salad.
- Lay a tortilla on a board and paint with BBQ sauce.
- Place the salad in the center of the tortilla. Roll the tortilla and cut into pieces.
- Enjoy. These keep in the fridge for about a week — we put ours in a Tupperware and the kids eat them after school. It makes a great snack.
