Chicken Salad Pinwheels

Ingredients

  • 2 chicken breasts
  • 1 cup sliced seedless grapes
  • 1/2 cup chopped pecans
  • 1/4 cup finely diced celery
  • 1/2 cup finely diced apple (we use pink lady)
  • 1/4 cup diced green onion
  • 1/2 cup Dukes Mayo
  • 1/4 cup Plain Greek Yogurt
  • An all-purpose BBQ rub and a tangy BBQ sauce of your choice

Instructions

  1. Season chicken with an all-purpose rub and place on the smoker at 275 for 1 1/2 - 2 hours until the chicken is 163 degrees.
  2. Remove chicken and let rest. Meanwhile, slice the grapes, green onion, celery, and apple. Mix together with pecans, mayo, yogurt, and a splash of tangy BBQ sauce. Dice (or shred) the chicken — we dice ours for better texture — and mix into the salad.
  3. Lay a tortilla on a board and paint with BBQ sauce.
  4. Place the salad in the center of the tortilla. Roll the tortilla and cut into pieces.
  5. Enjoy. These keep in the fridge for about a week — we put ours in a Tupperware and the kids eat them after school. It makes a great snack.
