Recipe 01
Pork Short Ribs
Ingredients
- Smokey Joe’s All Purpose Rub
- Pork spare ribs (amount is up to you!)
- Smokey Joe’s Got Ribs? Sauce
- Pickle juice OR apple cider vinegar (in a spray bottle)
Instructions
- Grab the ribs and trim any excess loose ends.
- Turn the ribs bone-side up. You’ll see a layer of fat over the membrane — remove the excess fat until only the membrane shows.
- Score the membrane.
- Cover in Smokey Joe’s All Purpose Rub (cover, don’t cake!) and let the ribs sit 10–15 minutes at room temp so the seasoning soaks in.
- Get your pit to 275–300°F max.
- Cook 2–3 hours to build bark. Once a bark forms, start spritzing with pickle juice or apple cider vinegar.
- Once all four points are tender, pull the ribs and rest 15–30 minutes.
- After resting, they’re ready to serve.

Chicken Wings
Ingredients
- Smokey Joe’s All Purpose Rub
- Chicken wings (amount is up to you!)
Instructions
- Select your wings and make sure you like what you see!
- Optional: add a binder to help the seasoning stick.
- Pat dry and season with Smokey Joe’s All Purpose Rub (cover, don’t cake!). Let the wings sit 5–10 minutes to soak in.
- Get your pit to 250–275°F max.
- Cook the wings 30–45 minutes.
- Drop the temperature and slow-cook until the wings hit 165°F internal.
- Flash-sear 30–45 seconds per side, or until you see bubbling.
- Rest 10 minutes before serving.
- You’re good to go — enjoy!
