Smoked Chicken Croquettes

Ingredients
- 1 chicken breast
- 2 chicken thighs
- 6oz Prosciutto
- 1/4 flour
- 1/3 cup milk
- 1 tsp freshly grated nutmeg
- Green onions
- Zavalas Bird Rub
- Salt to taste
- 3 eggs
- Flour to dredge
- Panko bread crumbs
- Peanut oil
Instructions
- Smoke chicken with Zavalas Bird Rub at 325 until breast reaches 165. Let cool completely and then pull and shred.
- Cut the prosciutto into small pieces and sauté with oil, the chicken, and green onions. Add the flour, milk, and nutmeg until mixture thickens. Place in a bowl and refrigerate 1 hour to tighten the mixture up.
- Form mixture into palm-size oval shapes. Roll in flour, then egg wash, and cover in panko. This will make about 14-16 croquettes.
- Heat peanut oil to 350 degrees and fry 4-5 croquettes at a time. Each batch will take about 1 min to get golden and crunchy.
