Smoked White Bean Dip

INGREDIENTS

  • 1 45 Oz jar of white northern beans
  • 1/2 c of finely diced red onion
  • 2 tbsp lemon juice
  • 1/4 c olive oil
  • 1 tsp of Goldees Brisket Rub
  • 1.5 tbsps fresh thyme leaves
  • 1 tsp minced garlic (optional chopped fresh jalapeño)

Instructions

  1. Mostly drain the beans and pour into pan
  2. Put beans in smoker at 225 for 3 hrs stirring every 30-45 minutes.
  3. Put all ingredients in a food processor and turn on high. Blend until smooth. You may need to add more olive oil to thin it out.
  4. We fold in diced fresh jalapeño at this point
  5. Refrigerate and enjoy with your favorite tortilla chips!
