Sriracha Buffalo Wings

Total Time: 2.5 Hours

Ingredients

  • 4 pounds chicken wings
  • Blood Bros Bird Rub
  • 1 bottle of buffalo sauce (I like Texas Pete)
  • 4 tablespoons (more or less) Sriracha

Instructions

  1. Trim wings and pat dry. Lay on a wire rack on top of a lined baking sheet. Season liberally with Blood Bros Bird Rub. Place in refrigerator for 2 hours to dry out — this helps get the skin crispy.
  2. Get smoker up to 450. I used hickory. Place wings on and cook for 20 minutes, flipping at the halfway point.
  3. While wings smoke, prepare the sauce by combining the buffalo sauce, sriracha, and more Blood Bros Bird Rub.
  4. After 20 mins, remove wings and baste the whole wing with sauce, then put back on the smoker for 10 minutes.
  5. Remove wings, top with green onion, and enjoy.
